Thanksgiving Break

Well I hope everyone had a wonderful thanksgiving, I had 4 separate dinners to go which I hosted for a few friends. So after all that good food and pie its time to get back to eating healthy again. This morning I had regular oatmeal cooked on the stove which I added a banana too, I think it was just the thing to get me back on track. For lunch today I’ll probably have some quinoa and rice with some hummus and some kind of fruit..not sure about dinner yet but i’ll think of something!

Tuesday November 22

Today was a pretty productive and healthy day!
I was able to get up and clean the house before heading to work and getting some errands done before returning home to dinner. and ate pretty healthy today as well so that’s definitely a win.
Breakfast: oatmeal with goji and raspberries and a banana on the side
Lunch: quinoa with black beans and hummus/cucumber/and and apple
Snack: another banana
Dinner: half modern greek salad from Panera with the bread as the side
I also drank plenty of water today yay for hydration!
I am needing some easy lunch recipes so if anyone has something simple and plant based they would like me to try out let me know here!

Baked Fries

So I made these for my family the other night and they actually turned out really great! I purchased a few sweet potatoes( though you can use any kind of potato you like) and I sliced them lengthwise into strips, you can make them thin or thick depending on your preference. after they were cut I tossed a few of them with garlic powder and left some plain. put them in the oven on my silicone baking mat at about 425F for 35 min. Add your favorite dipping sauce an you have an easy side for dinner or a nice snack. Really easy to make and healthy, will definitely be making these again soon!
