the Instant Pot

Hello! wow it’s been awhile hasn’t it! I have found trying to get closer to a more plant based diet has been difficult, I make the same recipes for breakfast, lunch, and dinner most days and feel great for about two weeks before I get bored or off track..and then I go wayyy off track. for weeks sometimes. It’s rough. thankfully I have found something to keep me on track a bit longer and that is my instant pot! I really enjoy making all kinds of beans but I hate buying cans because of all the chemicals that are in them. I used to try to cook dried beans in many different ways, in the crock pot or on the stove. I soaked them over night, I soaked them for two days! they always came out hard and un-edible. I am so amazed at the instant pot, I can put as many beans as I can eat in a week and set it for 30 min and probably about 45 min later they are takes about 10-15 min for it to pressurize before the beans begin to cook. it saves me so much time I should probably reconsider hiring my amazing housekeeping company…who am I kidding..Ill never do that! anyway I have cooked several pots of beans and rice and this week I’m planning to make an oil free hummus recipe! I’ll let you know how it turns out!

Baked Cauliflower

So I came upon a new recipe that was actually pretty good! which is saying a lot for me because I don’t really love cauliflower..but anyways I have read that after you wash the head of cauliflower it is best if it is completely dry before proceeding to the next step..if anyone can tell me why or if it is actually necessary let me know. after I let it dry I cut it into thin chunks probably a half inch think. then I put the cut cauliflower in a bowl and added enough olive oil to lightly cover all the cut pieces. then I put the mixture onto a baking sheet, I lined mine with parchment paper but im sure you could use foil too. on top I sprinkled on salt and pepper to taste, I think next time ill try some other things at this point..maybe garlic powder?? yumm. anyway to finish cooking i put this in the oven at 400 degrees F. for about 25 min. let it cool and then eat with your dinner! will for sure be trying this again soon!

Thanksgiving Break

Well I hope everyone had a wonderful thanksgiving, I had 4 separate dinners to go which I hosted for a few friends. So after all that good food and pie its time to get back to eating healthy again. This morning I had regular oatmeal cooked on the stove which I added a banana too, I think it was just the thing to get me back on track. For lunch today I’ll probably have some quinoa and rice with some hummus and some kind of fruit..not sure about dinner yet but i’ll think of something!

Tuesday November 22

Today was a pretty productive and healthy day!
I was able to get up and clean the house before heading to work and getting some errands done before returning home to dinner. and ate pretty healthy today as well so that’s definitely a win.
Breakfast: oatmeal with goji and raspberries and a banana on the side
Lunch: quinoa with black beans and hummus/cucumber/and and apple
Snack: another banana
Dinner: half modern greek salad from Panera with the bread as the side
I also drank plenty of water today yay for hydration!
I am needing some easy lunch recipes so if anyone has something simple and plant based they would like me to try out let me know here!

Baked Fries

So I made these for my family the other night and they actually turned out really great! I purchased a few sweet potatoes( though you can use any kind of potato you like) and I sliced them lengthwise into strips, you can make them thin or thick depending on your preference. after they were cut I tossed a few of them with garlic powder and left some plain. put them in the oven on my silicone baking mat at about 425F for 35 min. Add your favorite dipping sauce an you have an easy side for dinner or a nice snack. Really easy to make and healthy, will definitely be making these again soon!
