Hello! wow it’s been awhile hasn’t it! I have found trying to get closer to a more plant based diet has been difficult, I make the same recipes for breakfast, lunch, and dinner most days and feel great for about two weeks before I get bored or off track..and then I go wayyy off track. for weeks sometimes. It’s rough. thankfully I have found something to keep me on track a bit longer and that is my instant pot! I really enjoy making all kinds of beans but I hate buying cans because of all the chemicals that are in them. I used to try to cook dried beans in many different ways, in the crock pot or on the stove. I soaked them over night, I soaked them for two days! they always came out hard and un-edible. I am so amazed at the instant pot, I can put as many beans as I can eat in a week and set it for 30 min and probably about 45 min later they are done..it takes about 10-15 min for it to pressurize before the beans begin to cook. it saves me so much time I should probably reconsider hiring my amazing housekeeping company…who am I kidding..Ill never do that! anyway I have cooked several pots of beans and rice and this week I’m planning to make an oil free hummus recipe! I’ll let you know how it turns out!
